Our food truck might have been established in 2019, but our story dates back all the way to the 1960s with Doña Sofia’s birth in the humble rancho of Los Espinos De Carreon, Jalisco. Located in the mountains about an hour bus ride away from the nearest pueblo, La Villa Purificacion, Jalisco Mexico. Pictured above is La Plaza in Villa Purificacion where all the small farm towns that are scattered throughout the mountainous terrains gather during the annual festival weeks to celebrate tradition, dance, and eat delicious food!
Doña Sofia spent her childhood doing chores around the house. Cleaning after her father, siblings, nieces, and nephews. Minding the family livestock, including chickens, pigs, and her father's donkey. Doña Sofia grew up absorbed in the kitchen, alongside her mother and frequently joining other elderly relatives in their homes in that pueblo of less than 200. The homes didn't have modern luxury stove tops or measuring utensils. Cooking was done over an open woodfire, using only a few basic pots and utensils. There were no written recipes to follow. Everything taught and learned in those kitchens was handed down by oral tradition from generation to generation. Doña Sofia was taught to cook with all her senses. Using her taste and touch to choose the best hand grown and picked ingredients. You only really knew when something was done when it tasted delicious.
In the 80s Doña Sofia came to the United States with her husband. Her American dream was to build something for her family. She started by making some meals here and there. Earning her a reputation for Buen Sazon or a Good Seasoning Hand from everyone around. Fast forward a couple years, and Doña Sofia always finds herself working in the food industry. Her colleagues would often comment on what a delight she is to have in the kitchen as her spirit is very bright. Her cooking is so good that when her local organic market ran a recipe contest for their employees, she won! They feature her very own recipe to this day.
So strong is her reputation in the kitchen, whenever there’s a family event or a special occasion people request to have Doña Sofia make a dish. Sometimes it’s pozole, or sometimes it’s tamales, but what is most mouth watering is her Birria. So delicious and fragrant that when the smell reaches your nose, your stomach starts growling even before you can see the plate of Birria!
Our family knew that we had an absolutely brilliant Birria recipe so we had no choice but to launch our own food service that exclusively offers our Birria to our family, friends and guests in Portland, Oregon. Instead of using typical meats for our mexican dishes like asada, pastor, and carnitas; Birria is now the star that has taken over. Which is now how we are humbly offering this juicy and tender mexican food you to enjoy!
